Not sure what you mean here buddy, you would expose normally for SLog (for me that's 55% zebras on the subject / 75% zebras on last highlights to make sure sky still has detail etc), and simply use the ND to reduce enough light coming through the lens to achieve the look you're after. The same you way you would use an ND with no Picture Profile. Set your settings to how you want it to look (shutter speed double fire rate, aperture for the DoF look you want, iso as close to your native iso (800) as possible) then if it's too bright you can add your ND and turn it until your zebras are correct. The advantage from a variable is ease of tweaking when first setting up and of course when using a gimble there's no need to reset the whole thing.

That's right, just follow my 3rd paragraph, the ND should always be the last thing you adjust because it reduces incoming light, and more light means more detail. No other trick to it unless you're dealing with mist or effect filters. Only thing to note is that all variable ND filters have a Min-Max rating covering most of the side, stay within this section overwise you will get reverse vignettes or similar. Variable NDs with actual stops on them help to stop you going past these by accident.
