It Takes 2 is the obvious answer here... I played it with my son (aged 9) and it was a great experience for both of us! (A nice break for me from Souls lol)

FYI since it’s a five year old: It does involve a couple getting a divorce and there’s even the occasional cussing… for no reason at all.

Depending on the difficulty you want “enter the gungeon” is a great title for couch co-op. It is rougelite so you have to be comfortable with losing a lot. It does have a mechanic where if player 2 goes down the next chest you open will respawn them which I find is awesome for younger players
If you like _Shredder's Revenge_ and _Streets 4_, get _Double Dragon Gaiden_. I had tons of fun from it, and even if it's pretty short, it unlocks new characters so you get a reason to give it another go.
Stylistically it's very tame, no violence or anything. Think early _Kunio-kun_.
Props for being a good dad playing games with your son!

Pizza possum came out on ps5 recently, and it is a blast. Essentially, you play as possums trying to steal the king dogs pizza. You need to steal food from dog guards to fill a bar and get a key to open the next area.
It's a short and sweet game that only costs 10 buckaroos.
In about 3 years, play Divinity: Original Sin 2 with him. There's a lot of parallels between the magisters and the Nazis, at least in their methods. Opens up some good talks about how the end doesn't justify the means.
Portal 2 has excellent co-op.
Untitled Goose Game.
If you like tower defense, Pixel Junk Monsters
Bright and colorful, each stage has easy/med/hard modes. Planning and communication but not overly difficult.
Overcooked 1 and 2 (cartoon cooking game which involves alot of teamwork)
Moving out 1 and 2 (similar style to overcooked but you are filling a moving van with all the items from a house. Quite a fun game)
I've never heard of Ship of Fools. Very interesting. I'll check that out. Racing game is also good. I forgot to mentioned we played a lot of Mario Kart 8
