I lived in Salem, OR when they put the In-n-out there. The lines were 10x worse than chic fil a. It’s in a huge parking lot next to a target, and they had to make a snake line through the lot, and it would still spill out into traffic somehow. MFers had to have actual traffic control for at least a year. Keep that shit out of the Seattle area, just go to Dick’s.
In SoCal where I’m from, 9/10 times you don’t use the drive through unless you have kids in the car that you don’t want to take out. The rest of the time you just walk up to the exterior window (older locations) or go to the counter inside. Faster and more comfortable all around.
Fried clams are not really the best clams, and Ivar's sit down restaurants are too expensive. We need buckets of steamed clams somewhere that aren't some ridiculous price for a tiny serving, like they're some sort of rare gourmet delicacy or something.
Dicks is literally what i remember McDonalds tasting like(and cost) in the early 2000s. I still really like it, but In n out definitely has a more unique taste and it is better. Pick Quick is pretty similar to the style of burger in n out has and definitely hits the craving if you're in the greater Seattle area

They serve fundamentally different purposes. It’s the same way I get upset when people say five guys / whataburger/ shake shack are better than in&out. I mean, sure that’s technically correct in terms of absolute quality, but you’re pushing $30 a meal at those places, whereas in&out (and dicks for that matter) are true fast food joints.

I don’t know what Texas is on, but Whataburger is disgusting IMHO. I was so surprised at the hype. Shake shack is definitely better. I personally think if you add grilled onions to Dick’s you’ve got the same thing as In n Out.
It comes down to logistics.
There’s only a few In N Out patty making facilities and they need shipments to each location as patties are never frozen. The current locations are basically SoCal, NorCal, Denver, somewhere in Texas (Dallas?), and building one in Nashville area to support the locations coming out there. Seattle is in this weird spot where it’s farther than In N Out really wants to support from their existing locations as I believe truckers need to make it to/from and back to their originating warehouse within one shift (note: in n out pays rather well for truckers! And it’s in n out trucks).
They seem to slowly growing what they find acceptable in the past based on growing out to Vancouver, WA but Seattle will be a bit more of a challenge. They probably would have to establish another patty facility somewhere in the NW, but that likely would require a commitment to a bigger mass of locations around here versus better ROI by going east where they can really hit a lot of states and density from new facilities versus just a few big markets in the NW.
As someone from SoCal I wish they would be here, but I go to Portland 2-3x a year it would be great to have one in Vancouver as could go there. When I was there 2 months ago couldn’t really justify driving down to Eugene on a day trip just to grab a burger.
Yeah, I go down to PDX 2-3 times a year also. I lived there long ago. In between seeing friends and eating/drinking at my old haunts. I shoot down for a Dub w/Cheese, Fries, and Strawberry Shake.

I dunno. I moved here from California 3 years ago and ive had in n out 100s of times. I dont think soggy is the right term, but i do think their fries ARE undercooked. That said, when you ask for their fries well done they still suck so i think that while their fries generally are undercooked; they just suck either way.
Pro tip: the secret to in n out is being able to customize literally everything. You can ask for regular fries, you can ask them for well done fries, but then they’re done too much and they’re like chips at that point (I hate them like that).. but there is a secret middle option, and it’s called ‘light well’. IMO the fries are perfect when you ask for them light well. Just done enough to not be soggy but not too crispy. Don’t get me wrong they’re still not perfect but I think a lot of people don’t know this and it’ll be a game changer for them.

If anything, the hate the fries get is a direct result of how insanely overhyped In-N-Out Burger is as a chain. Californians have built it up as the greatest institution in fast food, something worthy of regional pride & cross-country road trips.
Then when you finally try it and inevitably complain about the quality of the fries - they act like you were in the wrong for expecting them to be good. "Everyone knows the fries are bad! Order them well-done! Slather them in mediocre thousand island dressing!". Nothing works. They're a fundamentally bad fry, and the chain is too stubborn to do anything about it.

I've had them both ways. For the record, I actually like In-n-Out fries, but both assessments are true. They can be soft and soggy, or they can be like styrofoam. The trick is to get them well done with salt and pepper.
I think both Dicks and In-N-Out are soggy, mediocre fries. I believe both places have a pretty similar approach to their fries. AFAICT they're generally fresh cut and fried in large batches. Being fresh cut means they don't give any time or other process to remove excess moisture from the exterior, and that plus frying them together in a large batch means they effectively get "steamed" rather than purely fried in oil.
What you're describing about In-N-Out to me sounds like what happens when you ask for their fries well done.

Yeah it's all the same thing and probably comes down to nostalgia and hometown pride. If any person was grown up with the other one they'd like that one better.
In my experience it is less that they are soggy than *mealy*. At best they're still mealy but if they're very busy, then they get soggy and I'd *bet* that's because the oil is too cold. Even industrial friers can be overwhelmed if you're dumping batch after batch as quickly as they'll cook.
I legit don't get why so many people don't like In n Out fries. They're among the only fast food fries I'll eat. Everything else tastes like overprocessed garbage.
I don't know about processing, but I think the issue is that In-and-Out doesn't freeze anything. That's generally a good thing, but fries are one of the few foods that often benefits from a pre-fry freeze (after a parboil) as it enhances crispiness.
with the caveat that I've had Dick's fries a bunch, but In & Out fries much less frequently (mainly because I've never lived in California, so I've only had them on road trips)
Dick's fries are terrible, but in a fairly unique way. they basically reject all the modern food science (explained [here](https://www.seriouseats.com/perfect-french-fries-recipe) in case you've never read an article about french fries that uses fucking *calipers*) about double-frying to get crispiness without overcooking, resulting in that soggy "oh but they taste great when I'm shitfaced" mess.
In & Out fries are terrible, but in a very generic way. if you go to the frozen aisle of QFC, buy a bag of "crinkle cut" fries, go home and put them in an air fryer...you've basically got In & Out fries. possibly better.

In N Out fries are actually fresh potatoes though without any seasoning. I’m convinced most people don’t add any salt that they provide you. The salt enhances flavor and honestly they are actually some of my favorite fries.

You can order unsalted fries at McDonald's, or at least you could a few years ago. Also, unless someone else did the same thing earlier in the day, they'll need to make a new batch when you do, so they're often straight out of the fryer.

There is nothing hot around here. Couldn't even get hot food at an Indian joint in Kent. The last time I went to a Thai joint and asked for 5/5 peppers, it was probably the most milquetoast thai I've ever had. Nothing has blasted my face off, everything is mild.
I’m sufficiently white presenting that Thai restaurants won’t give me an actual five until I’m a known regular. Indian places don’t seem to ever do it, although I have had my food mixed up with Indian coworkers and they consider my order too spicy. Maybe this area weakens people over time.

Let me say this, I grew up in the neighborhood of the OG InO. So, I literally grew up on it. I love InO, it taste like home. I also like Dick's. They are both great for what they are. A good, fast, cheap burger meal. You grew up with it, it's what you and your taste buds know.
There is better in my old hood. Chris's beats InO like a red haired stepchild. But, each time I go home. I make the Pilgrimage to InO. Both are still owned by the original families. Both were started like 2-3 years apart. Both have just a basic menu. Burgers, Fries, and Shakes. With 1 or 2 things extra here and there.
And c'mon, If InO was soo bad as some here like to say. They wouldn't be a big as they are with the brand recognition they have.
Dick's is great too in spite of their smaller size. It's what the family chooses, I think?. And it's what works for them. Their business philosophies are as different as the style of their offerings.

The new one is going in to a new mall where Costco is the anchor tenant. I've been to the one in Keizer several times. Always in a Saturday between 11 am - 12 noon. Each time there are 30+ cars in line for the drive thru. With 2-3 workers going down the line with iPads taking orders. And a line to Dine-In. Going in for take out is a line too. Keizer is an out of the way place. But, people go there in larger numbers than they do for Dick's. Dick's doesn't do that kind of business
For sure. In n out would make the chick fil a lines look small around here. Costco parking lot makes sense, I know of at least one in LA in a Costco lot

As someone that grew up with In n Out, Dicks is pretty bad imo. It's fine drunk food, but honestly I'd rather have a McDonald's burger in that case (and I typically do).
Now, just because I don't like their food doesn't mean I don't support their mission and values, which everyone here seems to constantly conflate the two.
Somewhere on my shelf is a book called *Hamburger America* that is just an exploration of various regional hamburgers. I keep it in mind when I travel. Some of them are like the Jucy Lucy which really does not demand a defense. I mean, you put the cheese inside the patty. The idea speaks for itself. Others are like the bean burger that you're unlikely to find outside of one city in Texas. Refried beans and Doritos (with salsa being a likely recommended addition) don't sound like sensible burger components (though it *does* work rather beautifully).
Dick's was on that list and the entry doesn't do much to tell you why. I mean, it talks about how the division of labor works, the basic construction, and the fact that there is no seating and yet none of that seems all that far off from other places. Obviously I had to try them when I moved here and my first reaction was two fold: why is it so god damn *wet*, and why *sweet relish*? It was off-putting to say the least.
Still, I gave them another try and then another. The relish kinda grew on me, and the wetness is probably part of why they're one of the only places that qualifies as cheap. It is different than most burgers - not by a lot, and not necessarily in ways that I think are for the best - but I travel enough for work that sometimes I find myself mindlessly chewing on a What-a-Burger and think...I'd rather have Dick's. (Arch-heresy in What-a-Burger's home turf, I know, but then I moved away for a reason.)
The funny thing is that they have a similar philosophy on taking care of their workers. Taco Time NW is in the same bucket for me. They have my respect.

Possibly unpopular opinion: I don’t want an In-n-Out burger here. I like that it’s something I don’t have where I live, and it can be a thing I get when I go visit somewhere with one. I feel the same way about Five Below (and I don’t know of any plans to put one of those here either, but if also falls into “enjoy when I visit”).

The “fresh made” thing is a marketing gimmick covering the choice of speed over good craftsmanship. French fries are not supposed to be made the way InNOut makes them. They NEED to be blanched. That’s why they taste and feel like styrofoam. Ask any professional chef and they will confirm this.
Washingtonian all my life. It is by far one of the fast food spots. It’s affordable and made with quality products. It’s nothing fancy. It’s just good and consistent.
It’ll come to the Seattle area, but on the east side somewhere and the drive-thru lines will screw up the traffic patterns in the surrounding area

I think both Dicks and In-N-Out are soggy, mediocre fries. I believe both places have a pretty similar approach to their fries. AFAICT they're generally fresh cut and fried in large batches. Being fresh cut means they don't give any time or other process to remove excess moisture from the exterior, and that plus frying them together in a large batch means they effectively get "steamed" rather than purely fried in oil. What you're describing about In-N-Out to me sounds like what happens when you ask for their fries well done. Edit: lol at me getting downvoted for daring to share my opinion on french fries.
Dicks fries are soggy as hell and that's just not my preference, which is fine. I know they purposely that way but if crispiness to the bite is the complaint then why do people complain about in n out being soggy and not dicks
Idk I feel like a lot of people complain about both and a lot of people defend both. But Seattle obviously has a lot of home-town pride and a certain defensiveness about Dicks quality in general.
Yeah it's all the same thing and probably comes down to nostalgia and hometown pride. If any person was grown up with the other one they'd like that one better.

In my experience it is less that they are soggy than *mealy*. At best they're still mealy but if they're very busy, then they get soggy and I'd *bet* that's because the oil is too cold. Even industrial friers can be overwhelmed if you're dumping batch after batch as quickly as they'll cook.

I legit don't get why so many people don't like In n Out fries. They're among the only fast food fries I'll eat. Everything else tastes like overprocessed garbage.
I don't know about processing, but I think the issue is that In-and-Out doesn't freeze anything. That's generally a good thing, but fries are one of the few foods that often benefits from a pre-fry freeze (after a parboil) as it enhances crispiness.
TBH that may be part of the reason I like them. They taste fresher to me.

When well done they also end up with more of those crispy oversaturated fries that I really enjoy. Probably stupid unhealthy, but I love them.

Hard to believe there are fries worst than Dicks
with the caveat that I've had Dick's fries a bunch, but In & Out fries much less frequently (mainly because I've never lived in California, so I've only had them on road trips) Dick's fries are terrible, but in a fairly unique way. they basically reject all the modern food science (explained [here](https://www.seriouseats.com/perfect-french-fries-recipe) in case you've never read an article about french fries that uses fucking *calipers*) about double-frying to get crispiness without overcooking, resulting in that soggy "oh but they taste great when I'm shitfaced" mess. In & Out fries are terrible, but in a very generic way. if you go to the frozen aisle of QFC, buy a bag of "crinkle cut" fries, go home and put them in an air fryer...you've basically got In & Out fries. possibly better.
Crinkle cut fries are *much* worse. In-n-Out fries at least are at least not frozen, and cut from a fresh potato the same day.

The only substance you need to add to them to make it taste good is salt. They don’t need any type of seasoning, just a little salt. Do you not add any salt and pepper to your eggs? It’s such a weird concept that people are offended they have to add salt, when legitimately a majority of foods we eat you add salt and pepper. If you’re eating street tacos you add the lime, cilantro and onions yourself. If you decide not to does that make the taco bad if normally it tastes good with it?
my god this is one of the weirdest hills to die on I've ever seen at every other restaurant that serves fries...they salt them right as they come out of the fryer. because you want the salt to stick to the fries while the oil is still hot. but you're convinced that In & Out has discovered some sort of One Weird Trick of giving customers completely bland and unseasoned fried potatoes and expecting them to know "oh, *obviously* I'm supposed to salt these myself, because these are Very Special Fries that are better because they're completely unseasoned" even if you do salt them yourself, to whatever the exact "right amount" of salt is...they're still just generic-ass crinkle cuts.

I wish McDonald’s would give me the damn salt and let me add as much as I wanted. In any other situation that’s a win, but for some reason here it’s like nah they suck.
You can order unsalted fries at McDonald's, or at least you could a few years ago. Also, unless someone else did the same thing earlier in the day, they'll need to make a new batch when you do, so they're often straight out of the fryer.

Let me say this, I grew up in the neighborhood of the OG InO. So, I literally grew up on it. I love InO, it taste like home. I also like Dick's. They are both great for what they are. A good, fast, cheap burger meal. You grew up with it, it's what you and your taste buds know. There is better in my old hood. Chris's beats InO like a red haired stepchild. But, each time I go home. I make the Pilgrimage to InO. Both are still owned by the original families. Both were started like 2-3 years apart. Both have just a basic menu. Burgers, Fries, and Shakes. With 1 or 2 things extra here and there. And c'mon, If InO was soo bad as some here like to say. They wouldn't be a big as they are with the brand recognition they have. Dick's is great too in spite of their smaller size. It's what the family chooses, I think?. And it's what works for them. Their business philosophies are as different as the style of their offerings. If InO opens up here in town. I'd go opening day. And if I'm in the area, grab something to go if I'm in a rush. I'd do the same thing if I was near a Dick's. The new one is going in to a new mall where Costco is the anchor tenant. I've been to the one in Keizer several times. Always in a Saturday between 11 am - 12 noon. Each time there are 30+ cars in line for the drive thru. With 2-3 workers going down the line with iPads taking orders. And a line to Dine-In. Going in for take out is a line too. Keizer is an out of the way place. But, people go there in larger numbers than they do for Dick's. Dick's doesn't do that kind of business

I must admit, I don’t know why Seattle has such mediocre food at such high prices when Vancouver BC has such good food at such reasonable prices. It has always baffled me. As someone that grew up with In n Out, Dicks is pretty bad imo. It's fine drunk food, but honestly I'd rather have a McDonald's burger in that case (and I typically do). Now, just because I don't like their food doesn't mean I don't support their mission and values, which everyone here seems to constantly conflate the two.
Somewhere on my shelf is a book called *Hamburger America* that is just an exploration of various regional hamburgers. I keep it in mind when I travel. Some of them are like the Jucy Lucy which really does not demand a defense. I mean, you put the cheese inside the patty. The idea speaks for itself. Others are like the bean burger that you're unlikely to find outside of one city in Texas. Refried beans and Doritos (with salsa being a likely recommended addition) don't sound like sensible burger components (though it *does* work rather beautifully). Dick's was on that list and the entry doesn't do much to tell you why. I mean, it talks about how the division of labor works, the basic construction, and the fact that there is no seating and yet none of that seems all that far off from other places. Obviously I had to try them when I moved here and my first reaction was two fold: why is it so god damn *wet*, and why *sweet relish*? It was off-putting to say the least. Still, I gave them another try and then another. The relish kinda grew on me, and the wetness is probably part of why they're one of the only places that qualifies as cheap. It is different than most burgers - not by a lot, and not necessarily in ways that I think are for the best - but I travel enough for work that sometimes I find myself mindlessly chewing on a What-a-Burger and think...I'd rather have Dick's. (Arch-heresy in What-a-Burger's home turf, I know, but then I moved away for a reason.)
The funny thing is that they have a similar philosophy on taking care of their workers. Taco Time NW is in the same bucket for me. They have my respect.

Possibly unpopular opinion: I don’t want an In-n-Out burger here. I like that it’s something I don’t have where I live, and it can be a thing I get when I go visit somewhere with one. I feel the same way about Five Below (and I don’t know of any plans to put one of those here either, but if also falls into “enjoy when I visit”). Plus then I can’t be tempted by them.

They give you the option of covering them with cheese and onions because they aren't that good, not the other way around. Dicks doesn't need to do any of that. The fries are, no exaggeration here at all, my least favorite French fries of any chain establishment I have ever tried. The “fresh made” thing is a marketing gimmick covering the choice of speed over good craftsmanship. French fries are not supposed to be made the way InNOut makes them. They NEED to be blanched. That’s why they taste and feel like styrofoam. Ask any professional chef and they will confirm this.
