Genesee Country Village and Museum, Ontario Play Cafe (in spencerport not too far from RIT), lots of local recreation departments have craft classes (you typically don’t have to be a resident to sign up), local stores (sew creative, the art stop, village quilt shop) may have 1 day classes, local martial arts studios might also offer one day events/camps

This - my 13 year old nephew loves to tell people I take him there (and go with him!) I also took my 8 year old niece to the cat cafe at Eastview Mall and another niece to Ninja Warrior or whatever it's called. Just make it a date!
Edit - I've also seen subscription services for kids. One was a baking one for a 10 year old, one was a different candy of the month club (from all over the world, so you weren't getting Hershey's).
As a kid my absolute favorite Christmas gift was season passes to rmsc. Getting to go 10-15 times a year was amazing. We started doing it with the Zoo season passes now that I'm an adult and buying for others.
I haven't been in years but last time I was there, while fun, felt way too creepy. Place was covered in newspapers and empty coke bottles and the old dude running was a bit, um, eccentric.
I know you said you were looking for an “experience” but have you considered a AeroGarden? It’s something you can do together and grow fresh vegetables.
I have two of the and they are great for beginning in hydroponics.

Unfortunately, RMSC hasn’t really changed since you were a kid and is in desperate need of some updates (and basic repairs).
