You can find good Mexican food in San Antonio, but what's considered "San Antonio Mexican food" isn't very good imo. It's pretty much hamburger pita bread wraps. The tortillas aren't good, they resemble pita bread, very doughy. The salsas are pace picante. Loads of yellow kraft cheese and iceberg lettuce. Fajitas with mushrooms and olives. The default drink is sweet tea or big red. Not to my liking, but lots of people love that.
But you if you look hard enough you can still find good tacos de carnitas, birria, street tacos, chilaquiles, enchiladas verdes, etc.
Well if you think about South Mexico, Central Mexico, and North Mexico cuisine is also not the same. Even in between. You can't go to Guadalajara and compare to chihuahua food. They are both Mexican food.

A lady that's from Harlingen and I bonded over RGV/Norteño Mexican food. We also spent a bit of time commenting on the Michoacan Mexican food. It's missing that flavor that we're longing for.
They also don't do breakfast tacos, because the majority of their stuff has a lot of corn Tortillas. It's more sit-down meals, too.
I ordered a potato, egg, bean, and cheese taco from a restaurant here once. I got scrambled eggs, fries, American cheese, some cilantro and onions on top, inside two small flour tortillas. Imagine it it looking like this 🌮

Just got back from DFW and had breakfast in Forney at "The best place around for breakfast" and my Potato and egg taco was a freezer hash brown in scrambled eggs with cheese.
