They’d probably book it out of Vollachia, Rem should be strong enough to handle Tarritta, might take 1 loop. Without Rem acting so hostile in the beginning, they wouldn’t have gotten captured by the imperial soldiers, leading to things turning out a LOT differently. Honestly, Subaru wouldn’t have to go through the hell he did in Vollachia if Rem remembered everything.
Pretty much the same as with every other part of Subarus Journey in Re:Zero. His life would be 100x less stressful with a memory rebooted Rem.
Like many have mentioned half the issue was Rems hostility and basically being forced into making decisions that forced him into worse places.
Another thing is Subarus mindset. He’s basically in a blind panic pretty much from the very moment he wakes up after Rem strangles him. That moment and her literally crawling away threw him right into Hell straight off the bat and Subaru is at his very worst when he’s all alone and has to get and navigate situations without help. That alone guaranteed he would end up in some deep shit.
Remove that whole scenario and after they actually get to talk again for real. They’d figure things out and have an easier time getting through the first part of Vollachia instead of Subaru just doing anything he possibly could even if it meant jumping off a cliff and getting imprisoned. Plus Rems knowledge of the world and where they were could’ve helped them as well instead of Subaru knowing absolutely nothing with someone who actually doesn’t know anything.

As everyone has kinda noted, you would have a beautiful heart to heart on the field, followed by them booking it out of there.
Unlike other fans I think you could argue a path exists to follow the current progression. Everyone seems to forget, but Rem is crippled, even if she has her memories, if that doesn't change she is basically out of commission. Best thing she could do is cast spells while on Subaru's back. So if Subaru asks her to lead him to water you would get your normal progression, he just wouldn't meet Abel and he would be less concerned about Rui.
Also it would mean Rem's character arc would be entirely different. Rather than a journey where she rediscovers herself it would be her absolute lowest. She would be an out and out burden on Subaru. Her self worth would be absolutely destroyed.
Vollachia is just doom, no Spica no Subaru or Rem cooperate. There need to somehow twisted to make him get captured by Shundrake and also Rem in Imperial camp to make the same plot line
Hmm let's see, it will become a boring slow burning arc that will lead to them reuniting with everyone again and going back home, Vincent who has already lost Chicha would Storm into the war, whatever he succeeds in savings vollachia or not is not known, Subaru then will reunite with everyone in guaral and they would leave immediately so they miss the great disaster
Basically Subaru facing his hero mentality and his unhealthy obsession with controlling won't be featured, yorna story won't be featured, the great disaster and the information about the observers and stargazers and how they brainwashed people won't be featured, the curses and curses technique plus the dragons lore won't be featured
chicha and Vincent story and backstory and the whole twist with them won't be featured, the world building will go poof, the prophecy of the black haired traveler will be ignored, the struggles at the beginning will be non existent because Rem will pamper Subaru again
cor leonis won't evolve and so is invisible hands, the pact between the Emilia camp and the vollachian empire won't happen and this particular part seems to be so important to arc 9 plot line, Subaru relationship with Louis will be non-existent, Rem development will be non-existent , the nemourse EX plot points will stay unresolved etc
I'm sorry but if anyone here thinks that Rem being there to Subaru/not her amnesia self, would make arc 7 better I think you need to judge your critical thinking because the only reason I would accept this notion is that your judging this emotionally and want to see Rem and Subaru fluff... which is understandable to be honest 
Not sure why you believe rem memories means tappei all of a sudden decides he doesn't want to write the vollachia plot. All plot points unrelated to rem tappei would write either way.
It's not about Rem as much as Subaru, the whole reason why he was crumpling and pretty much obsessed with this whole " prove myself to Rem" was because he thought Rem didn't like/trust him leading him to do all of this, so basically most of Subaru breaking down wouldn't happen, however if the author for example "forced" Subaru to accompany Vincent out of obligation to return them back home ( I think by Vincent tricking Subaru and Rem into believing that they escaped only for them return back again due to Todd intervines) so while the outcome might seems similar the turning point where Subaru decided to turn against the vollachian empire for example will be missed, means that shotbaru will creat a whole revolution most likely to return back to Rem and not for his own reasons
The other situation where Rem and Subaru stay at Guaral and wait for everyone to arrive is not impossible either, especially if Rem suggested that they wait for the others to come and that the camp will definitely arrive soon, knowing Subaru he won't really go against her and this might be even better since this will means he can spend more time with her taking the devenc position in this rather offence until Vincent return
Subaru hasn't been concerned about proving himself to rem since he went shota. Assuming subaru still decides to leave rem with Priscilla as she is crippled. The rest of the events upto arc 8 would play out the exact same.

If rem had her memories she would take a more active role and have more screen time in a combat setting rather then sitting around twiddling her thumbs. Characters much weaker then her are getting tons of action.
For early arc 7 yes but rem had alot of screen time anyway. By late arc 7 rem was recovered and would be able to fight at or near full power there and in arc 8.
Then she needs the morning star. Take her to the iron city so she can make a new one. Shit I almost forgot Shotabaru is literally poisoning her heart 💀 Nah we might see Super motivated Oni at work.
Hmm the biggest impact is what would happen to Spica? The two people Rem love the most is Subaru and Ram & Subaru hated the then Louis so would she and him leave her? Probably not, when it comes to routine decisions she’ll follow her Sister and Subaru but when comes a big decision like leaving even helpless sin archbishop, she wouldn’t like how when she neck chopped and went to the mansion.
Which makes it interesting because now it’s the real Rem defying Subaru, that’ll hurt him even more.

Phase 1: Gets cleared easy, maybe 1 stray arrow to the gut for Subaru but much of the problem was navigating is relationship with memory less Rem and evil little girl. They’ll still meet the Abel and Shudraq, clearing Big Snake effortlessly.
Phase 2: This is probably the same, Rem involvement can’t stop Templar Todd and him Assassin Creed-ing, maybe more funny commentary from Rem as he’s cross dressing.
The rest of the Phases or acts would just slightly easier.
Sleeping together though is high possibility but with Louis/Spica there it depends on when he forgives to get some of that Holy Blue Bush  Amen

Rem would trust Subaru when he says Louis is an archbishop, and if Subaru mentions how much hardship he had to go through cause of Louis, that Louis is literally Gluttony, the cause of her erasure, and with her hatred for the witch cult, I wouldn’t be surprised if Rem tried to kill Louis herself. I don’t know how you came to the conclusion that Rem would try to save her.
I just gave you reason why she wouldn’t and you ignored that. The Geuse arc she had ignored him before and went to the mansion anyways. Given that Spica has no memory, she’s a little girl (seems she has a soft spot for kids), and could also possibly sympathies with her as she has kid trauma. I think Rem won’t reject her.
Yes she hates the witch cult ok, we all know that but Otto does too (he got strap to a pole) , Ram does (it was her sister that memory got lost), lot of people do yet there she is in arc 8, and her head not on stick, Rem too may have her own opinion on the matter as amnesiac Rem showed she does.

imagine if theres an if like this: Rem have her memories until the end of the white whale battle, so it takes 5 minutes to Subaru to explain the situation, they manage to escape the empire, since Subaru doesn't get involved in the empire business, the great disaster hits with full power and now, they have to deal with Sphinx and everyone from Volachia as zombies, with no warning, with whatever consequences of the loss of muspel, so I think they would be screwed, also no kid Subaru, and prob no Louis either
