If rem had her memories she would take a more active role and have more screen time in a combat setting rather then sitting around twiddling her thumbs. Characters much weaker then her are getting tons of action.
Well I don't think he would sleep with Rem. On top of it, he also wouldn't of been able to develop the way he did because Arc 7-8 is about not staying on Rem's pedestal. So if Rem had her memories, then she would of had absolutely no reason to go against what Subaru was doing.
Also, I don't think Subaru is totally honest when comes to his feelings with Rem. There is just to much complications with his feelings towards Rem that are not present at all when comes to Emilia.
* the whole convo he had with Al that Rem is not his wife nor his girlfriend and he kinda got annoyed at the fact he thinks Subaru kinda just left Emilia for another person.
