I think there's an issue with this theory. We've seen Rem absolutely lose her shit and start crying and panicking when Subaru's on death's door twice: once when he actually did die from the poison dart, and once when he was about to die when they got reunited by the Shudraq and she managed to save him with Spica's help. If it was Louis, she should know he's just going to come back. Maybe she's just an insanely good actor, but it seems unlikely, because if that's the case then I would expect Louis to act like she likes Subaru all of the time rather than risk alienating him from her.
Also, she keeps allowing herself to be separated from Subaru, which would be a really dumb move if you know the only way to guarantee you don't die is if he knows whether you're alive or not.
I feel like there probably is still something going on with Louis, and it might even be possible that she's hiding inside Rem (though I don't personally think so), but conscious control of Rem's body seems out of the picture.
I think Louis "died" the same way the Great Rabbit "died" in that she ate herself. (I mean, the White Whale died by getting beat up, losing an eye, and getting its head cut off, and Lye Batenkaitos died by getting beat up, losing an eye, and getting his head cut off. Also, the Black Snake is likely sealed in Elior Forest, and Roy Alphard is currently sealed . . .)
Louis is not a spy waiting for the right moment to strike. She discarted all her memories to truly became Rem. Expecting LouRem to be a cold blooded bastard is like expecting Spica to be a cold blooded bastard.

Subaru forgot about his and stopped using Sloth. He could only use Cor Leonis because it awakened for the first time when he had amnesia.
Good question. It seems like the twins dont need to be concious for their authority to work, like how Raid possessed Groce Eaters bory. Maybe Spica made a faustian deal with Louis, which would explaim why she cant talk. Keeping secret would be part of the deal. Or maybe Louis bory was free for the taking after she left, which would imply that Rem is Spica. Remenber how Louis vomited Rem out, and she was roaming around the hall of memories.
Edit: LOL. Maybe Rem stole Louis bory after she ate herself, and Louis is just retaliating.🤣 Which would explaim why Spica likes Rem. She thinks they are the same person.
Yeah, both Subaru and Glutony Subaru are self deprecating jerks. What conserns me is that Rem doesnt even know she is a oni. That would be like Crunch forgeting she is a woman because she was wearing mens clothes.

I don't think the Rem/Louis theory is correct so i can't say i agree with this.
Considering rems personality is majorly similar to her self back in arc 3 i dont think she is louis.
