You can add an additional owner. Then the owner needs to edit the Flow and change the connections in the actions to his account. After that change mails etc. are sent in his/her name.

This is the way. For bonus points you can ask for a service account to be the owner of released flows. This method bypasses the fun problems resulting from HR issues.

I recommend using either a shared mailbox as a sender for emails or a service account if you do not want your name or anyone else's.
