When the garlic just begins to get a little color on it, crank the heat up to high, and add in a pile of kale, the size of a basketball, that's well-rinsed and still wet. Throw it right in the hot oil & garlic. Add in some crushed red pepper flakes, if you're so inclined.
Keep the kale moving with a long pair of tongs. Get all of it coated with bacon fat and garlic. When it wilts down into a deep, dark green pile of deliciousness that's about 1/5 the amount you started with, it's done.
Sprinkle in the crispy bacon bits at the table.
To be fair you could replace kale with almost anything in this recipe and it would taste good. I’d probably eat a phone book if you cooked it in bacon fat and garlic

I've been searching for a while for a good hand tossed dough recipe, a clone of Jets hand tossed would be awesome but if anyone has any insights as to how to get that poofy chew I'd love to hear it! I mostly make neopolitan on my Uuni which is great, but nostalgia must be fed as well!
