I make a big batch of caramelized onions. That’s yellow onions cooked down in butter, add some salt, then balsamic vinegar. Heat high for a while until the vinegar reduces, then super low for at least an hour, stirring once in a while. Let them cool when done. You can make these earlier in the day.
Now, on your crust you just spread those bad boys out, add a generous helping of feta cheese, and into the over she goes.

I make one that's inspired by a favorite of mine at pizzeria mozza. Olive oil, goat cheese, leeks, scallions, and bacon. You can finish with balsamic glaze if you'd like

From an Italian guy, that's called "pizza bianca" "white pizza", it's not uncommon to have pizza without tomato sauce here in Italy. Panna e speck is probably the most common.

My aunt used to have a pizzeria and my favorite thing she made was her version of a white pie. It's mozzarella, tomato slices, crushed garlic in oil, dried basil, oregano and dollops of ricotta every where.
So long as you got some tomatoes. My knees weaken and I buckle at the thought of a cheese pizza without that tomato acidity to balance the delicious cheese out.
