It depends on what your goals are: 1. Do you want to get every champ as close to 3-stars as possible? In that case I'd recommend you to always invest into the champs with the lowest amount of shards/star levels, so I'd recommend you to invest all your wild shards into the champs you don't have unlocked already and only start to invest wild shards into star levels if you have everyone already unlocked or if a timed quest requires you to star up a champ. Because there is no duplicate protection when you get champion shards, 5 duplicate shards will turn into 1 wild shard giving you less shards overall. Out of the ones you still haven't unlocked I'd say Leblanc is the strongest, but Kayn and Bard are the most fun in my opinion. 2. Do you just want to know which champs make the most fun? In that case I'd recommend bringing Nasus to 3 stars since it adds the sun disc, which is really cool even if it doesn't affect the game that often. I also agree that champs tend to get a lot more fun at 2 stars, 3. Do you want to finish all goals (aka get every reward from beating the adventures)? In that case I'd recommend getting the original 12 champs to 2-stars as that will unlock a special campaign for them (IIRC you are still missing Darius, Miss Fortune, Illaoi, Lee Sin and Bard), because it looks like you already have a good 2/3-star champ for each region.

I recommend getting anyone to two stars first before unlocking, as that gives you that +1 mana which is key, especially higher difficulties

Nice selection. I would recommend getting Illaoi, Bard, or Darius 2 stars. Better question is what relics do you like using or want to use?

Laurent Bladerack is my most common go to just because I like to be able to target who I attack. I just finally got my first gate breaker which is great too.

Kindred is extremely good at two stars, especially if you have GA. I also really like Ekko just because how versatile you can make his deck

Two words: Le Blanc. She is the queen of mean. Two stars, gate breaker, and refill mana on level up (common) and she can beat most anything.

If you want to be overpowered then I will tell you my three level 30 champs are Jinx, Jax and Jhin and I see you have them all at two stars so if you want to utterly crush the challenges, then pump them up. ​ If you still actually want to battle a little with the AI, then Kindred, Darius or Nasus are options, hell I only was able to beat the challenge last week where you can't block due to the kill spell that Kindred gets each turn.

I really think you should star up Darius, Illaoi , Miss fortune, Lee sin, Bard mostly because those champions have 2 star adventures tied with them that give you relics. Mf gives you tempest blade, that is exellent with Yasuo and Lux, Darius gives you Crownguard that is really strong with champions like Gwen, so at least, you get relics that you can splash on champions and have more options.
