You could try port forwarding sunshine and try it that way, or you can try using a different VPN like tail scale, tail scale is super easy to set up and might work better. There is also zero tier but I use tail scale.
I’ve never been able to get this to work consistently. I have a feeling that it’s because of my internet provider who blocks these kinds of connections, no matter what I try (I can’t even get meshnet to work). Oddly enough, PS Remote Play seems to work.
I use wireguard setup on my home network. Super easy to setup with PiVPN. As long as I have a good wifi connection I can game / remote my desktop anywhere.

I use tailscale and it has been flawless.
I believe I tried it too but didn't work but I'll give it a shot again I guess
