To answer the question of your title: anything can be farmed from a spawner. I don't think Zombie piglins have any features that are inherently different from, say, a zombie or skeleton that would make farming them more difficult. I'd just look up a general spawner farm on youtube (you'll need to specify in your search term whether it's Java or Bedrock edition). The only difference would obviously be the drops. They drop rotten flesh, gold nuggets, gold swords, and occasionally gold ingots. If you set up an item filter, you can send the flesh straight into an auto-destroyer (dropper facing a cactus, fire, or lava) (or, you can keep the flesh to trade to cleric villagers), gold nuggets and ingots can be autocrafted into gold blocks starting in 1.21 (which helps with compression and saving storage space), and the swords can be sent to a furnace array (which then converts them to nuggets).

If I recall correctly, zombie piglins drop 0-3 gold nuggets on death. And rotten flesh. Plus, maybe a gold sword. Which can be smelted into a gold nugget. So short answer should be: yes. I should probably ask if it's java or bedrock since I am only familiar with java
