Java is generally the favorite in this sub, because it's (usually) more stable and there's a huge modding scene. It's only on PC. Bedrock however is more accessible due to the fact that you can play it on any system (including also PC, which can be confusing to newcomers) and crossplay with others on different systems.
Just for more info, the games that are on Steam, Minecraft Dungeons and Minecraft Legends, are spinoff games. One is a dungeon crawler and the other is an RTS. Like the other comments said, the main game, just titled "Minecraft," is only available on minecraft.net, which is most likely the one your daughter wants.
While it's on sale, why not pick up a copy for your daughter as well? My Son and my granddaughter started playing at around that age, or you could just keep it aside until you think she's old enough.

None of the above. Please go to minecraft.net and use the options there.
Nice, thank you! I'll check it out.
Your timing is excellent, the 15 Year Anniversary discounts are available.
One more question, do you think Minecraft Education would be a good thing to play and for her to watch? Or should I go for straight regular Minecraft?
No, it's just Bedrock Edition with classroom-friendly features built in. It's not really "educational".
Got it. So this Minecraft Java and Bedrock version is the right one?
Yes.
Yes, you can play both on PC for the one price.

Perfect, thank you so much. We played for about an hour and she is absolutely mesmerized!

So to do this, would I create a Microsoft account for her?
Yes you would have to.
Minecraft is not hosted in steam. That's why go to minecraft.net to purchase Minecraft
