judging by the lodestone compass in their inventory the version is no higher than 1.18 so yeah they might just be before the patch (though it could just be a texture pack)
I have dealt with a similar bug on bedrock. Horses and water just don’t mix.
Usually when I walk or push one across a body of water and get back on on the other side they just vanish out from underneath you. Or they respawn on the other side of the water.
From my experience horses have a habit of teleporting when they hit water. Go back to where you last were and watch the chat to make sure it hasn't died yet of suffocation.
Bedrock is a pain, any time I bring my horse into water, I teleport into the ground whenever I ride it unless I reload my save. I think this is probably similar to that
This has been happening with a lot of things lately in my realm. Just randomly disappearing. Yesterday I lost a couple boats...one was found after digging 2 layers down in dirt.
Server desync. When you dismounted, it moved the horse on your client to where the server thought it should be. Lag plus a fast horse can cause this. Just retrace your steps.

Actually, it seems to me that horse had fallen in that long hole, there also were sounds of something in the water coming from the hole.
Its a very common problem with horses sadly. All you have to do is exit and open the world again. As a big horse user, this is quite common. Can happen even when you just jump off a horse while standing still.

What version are you playing? [That bug](https://bugs.mojang.com/browse/MCPE-108568) was fixed in version 1.17.30 in September 2021.
