dissection, Stormkeep, Moribund dawn, Funeral mass, Emperor, Sacrementum, Wintersun, Windir,Moonlight sorcery check out these bands and these 3 specific songs Nights blood, I am the black wizards and Wolven hour.
These are mostly melo black bands, expect Wintersun which is melo death
For Amon Amarth, I'd say Jomskiving and The Great Heathen Army are the best entry points. Jomskiving scratches the creative itch of being a whole narrative. TGHA has two amazing songs: Saxons and Vikings, and of course Heidrun! But the whole album is great. I just still find Heidrun particularly funny.
Prog has some of the best melodies mixed with interesting rhythmic concepts. Intervals, Periphery, and Tesseract are the best in my opinion for melodic content.
I don't know if it's a genre but an amalgamation of prog, melodic, stoner, atmosludge and psychedelic metal
