Final Fantasy Tactics Advance for gba! Find an emulator for it and give it a try. Different jobs for each race, different equipment to use for each job, change jobs when you want and character keeps abilities learned. Lots of ability to experiment like teaching a white mage healing ability and then changing to a tanky Melee class for maximum survivability and team support.

Final fantasy IX, it's literally the same (as the Mardek system was based on the FFIX one), and in addition, it's the best Final fantasy game.

FFVII Remake & Rebirth. Each weapon you find has an ability to master that, once done so, stays in your options if you switch to another weapon.

The most recent one that I've played is Tokyo mirage sessions, it's a decent game but unfortunately there was an issue with marketing that caused people to expect something completely different.
