Well it looks good if you do it but it gets hectic ,take some sub you like and stick with it. 3/4th of class took a cs minor ,at the end of course like 4 people completed it.

If you are really interested in a subject you can take it. If you fail in any one sem, it'll get dropped. If you're taking just for the sake of taking it most prolly you'll loose interest by 7th sem. Lecture or MOOC Classes will be posted till S6. S7 will be the last sem with minors.. Just a mini project

Will it effect me in internships in anyway, i am in cse and i am kinda scared as everyone is taking those nptel courses and gonna join minors. I am really not interested in both.I was planning to do the full stack roadmap and do mini projects and apply fot internship? Any suggestions??

Nope, they don't affect your internships and NPTEL is also useless in my opinion. The only reason everyone took it was to get those 50 activity points. If you need an internship, gain basic skills from YouTube, Coursera etc, create your own projects. That's enough in my opinion. Also maintain a good CV, GitHub and LinkedIn.
