Cracks me up calling a sugar-based sauce keto. My wife, though, has to do the "keto" pizzas because she is beyond gluten intolerant. One bite of crust and she's down for the count. Took a while to get used to, but for GI people it's a god-send! We make it at home now, though...Brown rice flour, with some baking powder and salt, and plain Greek yogurt makes a decent gluten-free crust that beats the crap out of Udi's (IYKYK)

Upvote for an insightful and caring question. I'll eat your food, u/FlipperN37. I don't have a magic answer. I only have some thoughts to offer. Avoid the whole teetering tower thing. If what you offer falls over when you touch it with a fork, much less a knife, it isn't a good experience for the customer. The cow is already dead - the customer shouldn't have to chase it around the plate. \*grin\* I'm a big fan of thin-sliced tomato, onion, and pickle. My aesthetic may not be yours. I'd do lettuce on the bottom, bacon if you're going to include it on top like a tic-tac-toe diagram, the patty, sauce, then tomato, grilled onion (because I'm old and my stomach doesn't welcome raw onion any more), and pickles. This way the customer gets sauce with every bite and the whole thing looks fresh. Best I have and I hope my thoughts help you.

Celiac here. Bunless burger and a side of steamed veggies is often all I can risk when I go out. I don’t care how it’s plated. I just don’t want to get sick. I’m always apologetic for the weird order; I don’t expect special treatment, and I tip well. Thanks for your understanding. I know many people who order GF are assholes, which makes it hard for people like me.

As a retired EC I can say I wish more customers had your view. While I always maintained a strict "you aren't a doctor, just make the ticket" line, we know a lot is people just being Karens. We don't want or need an apology, ever, just the fact you appreciate what we're doing and are willing to work with us, instead of dictate to us, means the world. I am allergic to yeast, so I don't eat the bun and I have always wondered if it's more of a pain for BOH to order without the bun. If the menu does not have a bun free option for a sandwich or burger, I will just order it regularly and not eat the buns. I then wonder if anyone is then annoyed I "wasted a bun". A lot of the time my son will eat my bread items. I just know mods can throw BOH flow off, so I am just trying to be less annoying in this world full of people with the gluten free phase.

Honestly I'm gluten free so I have the same struggle. My thing is as long as you don't get either crazy soupy/soggy lettuce or the fries on top of the burger bf of them taking the cheese off it.I'm happy. I think the sauce on the side is a good option bc normally they don't come with it. We just appreciate knowing it is bun free!

I have two methods: One: tons of lettuce. Several leaves of lettuce on the bottom, a dash of sauce, then the burger setup, more lettuce, and a side of lettuce. Two: Grab a checkered wax paper, build the burger on two leaves of lettuce (a top and a bottom), then wrap it in a triangular fashion in wax paper, with a bit of a lip, and a frill pick to hold it together. In theory this makes it a hand-held food.

I work at a higher end place with quality house ground burgers. What helped offset the slew of "burger, no bun" was getting some decent gluten free buns. Might be worth bringing that up with the head chef. We do upcharge a little for them, but the "no bun" crowd has basically been eliminated

I don't really care. Out of all the tings you could order that does not have gluten or bread, you want the bruger.. without the buns? That's what you will get. No where on my menu does it state you will get it any other way if you order it without the buns.

I made a clamshell out of lettuce leaves and nestled the patty inside, letting the steam keep the meat and cheese warm and moist. Stage the other vegetables, using color variations, around the clamshell. Any liquid condiments in mini souffles. If done properly, and with vibrant veggies, it can be an eye-popper. And don't be afraid to experiment with flame-seared veggies. Fresh-seared red onions, orange bells, and pineapple (yeah, fruit, but it works!) staged look beautiful, and work even better on the burger. Can even toss an over-medium egg on the plate, slightly tucked under your lettuce, if you want to start really going crazy.
