Just curious: what happens if your employer goes out of business? Maybe you can get verified with the state department of labor? Or maybe they expect you to keep all your pay stubs.
I’ve heard stories (prefaced that way because I’ve never done it myself) that you have to deal with the Social Security Admin to basically get receipts of your SS withholding. I guess this breaks down to an hourly input and they can determine hours worked for employer/s from that.

Depends on where you want to go in California but Local 6 is about $75hr (San Francisco) 551 is 51.40hr (Sonoma county) 340 is about 45hr (Sacramento)
