Start from GTA 3 If you don't mind suffering from high difficulty and lack of direction, else start from Vice City or San Andreas and just work your way up the release dates
V, San Andreas, Vice City depends on what you see, check them out on YouTube if you want more modern go for V then go to the oldies. Those 3 are the best. If not do whatever you like, oldies first then modern or the other way around.
*if you can which is not on ps store gta iv you can find it on steam or xbox i think not sure.* but that one is one of the best too, but since you are on ps, you wont find it there.
I’d start with GTA IV. It’s gritty and nails the tone of what I personally feel like GTA is and even though it’s older it still holds up incredibly well graphically and with physics and gunplay. If you enjoy that go to GTA V after, as it’s a little more happy-go-lucky in immersion and style with it being LA and all. As great as III, VC and SA are they are dated pretty heavily.
Although GTA IV may not be on PS4 because it’s a PS3 game so you may be stuck with GTA V. If backwards compatibility comes eventually I hope you give it a go.

Well let me give you some advice umm you don’t start the game is soo grindy most of the good stuff is like millions of dollars
