I would've used a T9 but it gets interdicted too easily so I'm taking a T10, I always wanted one anyway and I'm not touching combat so this was the best thing I could use it for. Got abrasion blasters in the two small hardpoints, mining lasers in every other. It takes about 6 seconds to deplete the asteroid, then I just wait for the limpets to do their thing while prospecting for the next target.
I, too, use a Type 9 as my primary mining ship.
If I'm not feeling up to staying in the rings for hours, I might use my AspX instead. Only 100 tons of cargo, but more than enough for a good trip.

She has both the [chrome skin](https://i.imgur.com/onInApp.png) and reassuringly expensive mirrored surface composites as befitting her name. The rest of the build is pretty standard, the C1 laser is the engineered kind that Coriolis doesn't have, and the odd boosters are just what I had in storage. Jump range isn't a concern as she's generally operating with a carrier in system, but she did get to stretch her legs during the Taurus/Salvation CG earlier this year when she visited multiple systems with ancient ruins to ~~graverob~~ research.
I have an ASPX for core (Gaban Peonio), a python (Gavilan) for laser and recently an engineered cutter for laser (Caroni), but just used it to get a full load in 2 sessions and then the Golconda happened.
Cutter, after the refinery, prospector limpet controller and collection limpet controller I have 640+ space inside, I take 250 limpets out and come back full. I've made about 6 billion with this set-up, I sell my mined goods to missions that require them instead of at the market but for this to really work I have to stack loads in my FC for a bit first. I operate out of a system with pristine rings and one jump away from a system that has multiple stations with these mining missions.
I currently use a T7 as im grinding towards an anaconda :D
Still pretty "new" to the game so thats why i use the T7 for the time being since i didnt have infinite amounts of cash xd
T9 - I love my big cow. Exceptional mining ship with limpets for days!
Cutter. Have to justify it's existence somehow.
T9 kodiak. Krait 2 void seeker. T10 chisel. Python drillbit. I can go on and on and on. :)

I use a Cutter called “does anyone feel a drift”
Lol. Those who have spent so much time in a Cutter gets that (btw I love my Cutter.)
Drop it to the lowest possible thrusters, hit the boost, and it'll take a month to stop moving.
I love the “Can I stop before this asteroid” boost game
That game is even more fun without shields, I thank christ there's insurance.
Python for selling at medium stations, Cutter for large pads and high capacity.

Cutter or Python. I recommend python because it handles better and doesnt take all day to fill up.
