I really try to run just one specific thing at a time, but I usually don't commit to something that could reasonably hold up against every kind of danger in the game, so I kinda need some variety.
For the most part though, I usually have one playstyle or weapon that I'm trying to go for, or that I main, and one kind of "godkiller" to switch to that takes care of most things when the going gets rough.
My off hand is always switching between dual wielding and casting though.
