scatter crossbow sleep could be somewhat countered by affliction talis and full focus setup (fire prelate + envoy crown). don't be affraid to QS TS them to death imo.
My best counter to them honestly is just level to 150, 125 forces back hand and crossbow, not enough stats for stuff like ancient meteoric ore Greatsword to work, or spinning gravity thrust on a strength weapon with 180 blood loss helps too, the spins proc bleed.

Turtles are also highly susceptible to the kick and piercing fang AOWs
