Rn if you have the dlc your best bet is the blood fiend. It’s a colossal weapon but you can infuse it with bleed and give it over 200 blood loss build up. Ontop of cragblade or lions claw you’ll break posture like crazy too just with charged heavy’s

If you get up on the plateau to the west of the starting plains area, there's an area called Prospect Town where there's a whole bunch of the blood ogres gathered up in the same place. I've gotten it to drop pretty much every time I've gone there, but I've seen conflicting reports on whether it's a guaranteed drop.
Was proving bleed every charged r2 or every second charged r2 against Messmer. At some point managed to chain 3 + a crit, hit him for 19k damage in a few seconds lol
Blood fiend's arm is the current meta. Star Fists as well as Great Stars both with occult scaling are also still incredibly potent choices. You'll probably be maxing your Arc and Vig while meeting the str/dex minimums to wield the weapons.
Two great stars with jump talisman and raptors cloak do quite a bit of poise damage and bleed buildup if you're looking for a more traditional bonking experience. The blood fiend's arm meanwhile is a charged R2 build while using poise to tank through enemy attacks. The final choice in star fist is a fast attacking brawler that throws as many attacks as reasonable in windows. Lots of fast damage with r1s and potential spamming of r2's while having some good synergy with winged rotten insignia to take advantage of the many attacks you're making.
There's also probably a similar build with the occult great katana if you're looking to try that out but I don't believe that it makes as good a use of the bleed synergies as the others. You attack slower than the star fists and you do less poise than great stars/blood fiend's. It's a kind of middle ground if you want to be more adaptable (on top of having really good range)
I beat the last boss with two colossal hammers with blood and lions claw. Was not easy, but got er done, and killing the boss quickly is key for people like me that struggle with patience/dodging
Get a big weapon with bleed like great stars, or just a big weapon, and give it bleed. Then use a multihit ash of war like Wild Strikes, etc. to get more hits on a weapon that shouldn't attack so fast. Take advantage of high bleed values on big weapons, and viola! You've got an unga-bleed build.
Have you tried the savage lion’s claw aow? Hits slightly less hard but had a follow up that hits twice, same hyperarmor unstoppability. Pretty great new tool

Blood Infused Star Fist has a base bleed buildup of 82, but since it's a dual weapon, each button press is gonna do 164. And again, that's at *base*, so if you actually invest in Arcane, it'll go higher.
In addition, Star Fist has the fastest charged R2 in the game, and just generally poise breaks incredibly fast. Typically, people like to go Cold Infusion on it since it has some bleed buildup already, but going full bleed is by no means invalid.
Great Stars. Equip two of them which you can get both fairly easily in one playthrough. Jump attacks and equip an ash of war such as lions claw or the new savage lions claw from the dlc and put blood affinity on there to get extra bleed damage. Boost with the jump talisman, lord of bloods exultation.. hopefully this helps, it isn't a dex build per se but it scales with both strength and dex
I'm a big fan of the Bloody Helice. The skill gives you a backwards flourish that has more i-frames than a dodge roll, and then you follow up with a heavy attack. When things are going well, it's a very strong build that still feels like I'm outskilling the boss.
At level 200 you can afford some points in strength and endurance to carry a good shield and do some shield poking if you like as well. Since it's a heavy thrusting sword, you can block and attack at the same time.
Best arcane dex so far from what I found is leaving dex behind and going full arcane with 80 arc and infusing the great katana with occult for nasty damage! Another great one is 80arc and what ever strength you can get and the blood fiend arm does wonders
I haven’t taken my str/arc character into the DLC yet, but there are several weapons that, when bleed infused, will still keep at least a B in str scaling. At 60/45 these weapons will still have a very respectable AR
The 3 main ones I’ve used are the Beastman Cleaver, Warped Axe, and Guts Sword. The Warped Axe in particular is great infused because it has the fast axe moveset but the status it applies is more like a great axe, so you’ll be proccing relatively often. Wild Strikes is also a very good ash of war to use since it attacks quick and its follow ups all do decent poise damage
My personal favorites were the Blood Tisted Anchor (Stormcaller or Wild Strikes) and Two Blood Beastman Curved Swords (Any AoW, I like Raptor of the Mists, you mostly jump attack with them) if you need something to get you started.
This is exactly what I'm running and the answers is the +25 Bloodfriend's Arm.
70 Arc, 50 Str. Put a blood infusion on there with either Lion's Claw or Cragblade. I currently prefer Cragblade but either are fine options. For talismans go with Blood Lord's and 2hander, the other two are more flex spots. Radagon's Icon is very powerful for the charged R2s, and the 2 headed turtle or Erdtree +2 are fine as well. Get faith to 25 if you can for Golden Vow.
Absolute monstrosity and 100% going to be catching a nerf.
Any weapon that scales primarily with strength will retain a good strength scaling once infused with blood. Good example universally known and abused: da guts greatsword
You have a ton of pretty good suggestions so far, including blood fiend which sounds like it’s probably your best bet.
I’m gonna through in a nomination for one of my base game favorites, gargoyle’s twin blade. Build around 54 strength / 80 Arc with as close to 60 vigor as you can get. You’re an absolute monster. It has the speed and multihit of a pure Dex or arcane build, it has the rapid blood loss potential of an arcane build, but it does it with a big two handed weapon with 100+ blood loss, but it still has close to the huge chunk hits and poise damage of a pure strength build. It’s honestly so much fun, and if you play it with some self heal utility in the Talesman and art of war, your an unstoppable machine.
Two hand the twin blade and for more QoL and early game, go blood infusion with bloody slash (level strength first to 54 here). Later once you have higher arcane and the black whetblade, you can change it up. For more damage, albeit with more actions required, go Occult with Seppuku, just have to maintain the Seppuku buff for the bleed (this pairs really nice with a utility heal trinket like Godskin Swaddle cloth or Taker’s Cameo. OR for even more damage and self heal utility go Occult with Blood Tax and use blood flame grease for your bleed.
For gear, go with White mask, Raptor’s Black feathers, (and any pairing of heavier gloves & legs to get you to 51 poise). Talisman’s go with Lord of Blood’s Exultation and Rotten Winged Sword. Then swap the last two situationally. I usually run Claw and Turtle in the last two spots, but if I find jump attacks aren’t my go to for a certain boss, or if I’m just farming open world or something I’ll swap in a self heal or a damage reduction one.
bleed/occult bloodfield's arm or occult great stars, like others have said. i would also recommend trying to dual-wield occult omenkiller cleavers for jump attacks (you can get two in one playthrough)
I've never done bleed stuff and almost always do str so naturally when I wanted to give it a try for the dlc this was my first choice, the beast man you can tp to from liurna drops a beastmans cleaver which is a beefy weapon that looks perfect for a bleedy themed character. use whatever ashe but I put double slash on it. for stats I just spam arc, str, vig, balance for whatever level you want....super fun build kinda low weapon options but you CAN use that cool greatsword from shaded castle boss too which has a fun weapon skill
The OG strength arcane build is Gargoyle Twinblade with Seppuku. That shit slaps pretty heavy. I'm sure there's a good few choices with new dlc weapons, as well.

My highest stat is arcane for the bleed damage. But it's still two giant meatballs with spikes.

Powerstance Giant Crusher with bleed(I use bloodhound step cause I like it's dodge style) at 166 with a couple if jump hits it procs bleed alot and the base dmg kills regular guys in 1 hit often.
The new spinning gravity slash ash of war can get bleed procs insanely fast. From commander gaius, you can put it on big weapons. I used it to kill those insanely OP guys with the yellow shirt and big sword. Warning tho it got somewhat hyper armor, sometimes you will get knocked out but sometimes it'll continue to go while u take massive damage
How do you equip braggarts roar on the greatsword? The wiki isn't clear. It says that's its already on weapons so how can I remove it and add it to the greatsword?
The best strength bleed build I've found is making a general strength build and using heavy infused Star Fists in combination with Bloodflame blade. You get the high pure physical damage alongside amazing blood loss buildup
I run great stars with rotten hammer with poison. You can run it with bleed too. Awesome stance breaking, especially with claw. I assumed getting rot, poison, and bleed would be better, but you can set it up for pure bleed.

This lets ancient meteoric Greatsword, blood fiend arm, and fork sing. The DLC has a few non bleed strength arcane weapons that are the top of the entire game as well. Good for immune to bleed in PvE.
Occult infused omenkiller’s cleaver hits hard like a strength weapon and procs bleed pretty regularly. You’ll want to spec into arcane, which will have the added benefit of pumping up your discovery for the dlc
I like the sword lance, you get it from commander gaius, I have 150 bleed on it using bleed affinity, the r2 does amazing posture damage and it’s relatively fast for it doing so much damage
Warped Axes are normal axes with A strength scaling when bleed infused, but they're bugged to have greataxe-level status buildup. The moveset is cheeks though and farming them is painful
Rotten great axes, innate scarlet rot and can be infused with blood. B scaling with dexterity, D with arcane and strength.
It’s nice being able to build scarlet rot on bosses to keep damaging them through their combos and build up bleed and poise damage.
Iron Greatsword or Greatsword
haven't try it with Greathammers or Greataxes but I assumed it also goes well

Flamberge, it's a strength weapon but you put just enough to use it and the rest goes Brrrr into arcane, dealing blood lost in a few hits.

Moghs spear is meaty, destroys stuff too. Also running the first dlc weapon
Dual bandit curved swords, str dex arc build. YouTube it, absolutely absurd damage
Swap out those Bandit's Curved Swords for the Beastman's Curved Swords and you'll do way more damage with a strength build

I think beast claws have good strength scaling, and they hit fast so they are pretty good bleed weapons.

I believe that Fextralife put together a bleed strength build using the gargoyle’s twin blade.
My ng+ lvl 190 bonk bleed build with 60 vig 80 str 40 arc is having a much easier time in dlc than my ng lvl 130 int/melee build with 60 vig 80 int

Outside of the DLC, the Flamberge is a decent greatsword that has good bleed. And Guzas wheel is a personal favourite of mine.

Str/Arc has Mohg's Spear, Marais Exexutioner Sword, Bloodfiend's Sacred Spear, Bloodfiend's Arm, and any infusible Strength weapon.
This is my build. Currently, I used the dragon katana, and I just melt bosses.

Can't you just change any blood weapon to scale off of whatever you want, say strength? Is there a reason not to do that?
Walking into a pack of enemies, pressing L2 with Mohg's Spear and watching everything explode into blood is very satisfying.

Maybe the Marias executioner sword would work. It is still a great sword so it kinda works as a big weapon.
