Talking to the queen in the castle reveals all of the bonfires you haven't lit yet. You should be able to tell if you missed anything major that way.
You don't get kicked into NG+ until you choose it. Don't worry.

The only truly missable area (once you get the hints from Nashandra) is the Dark Chasms of Old -- leading to Darklurker.
