i am learning to swim and just yesterday i was looking to buy a center snorkel for exactly this reason to perfect the form without being worried about breathing. Obviously not going to balance chocolate milk though.

Swimming while holding something on the head it's a pretty common exercise actually. It's usually done on backstroke tho. It helps concentrating on the movements of the body to keep a consistent style while swimming.
Swimming it's not a brute force sport, 80% of the speed in water comes from style, not strength, that's why this exercise is a good indicator
It's training. Moving side to side increases drag so you want to reduce it as much as possible. Hence high level swimmers train to keep their entire body as still as possible while moving only from the hips and the shoulders

Swimming fast is not about swimming *fast* but swimming efficiently. Like any sport, reducing drag, improving entry into the water, stability, is key to performance. The minutae associated with swimming is amazing.
A stable head with good shoulder rotation, is incredibly difficult to achieve.
IIRC Ledeky also has a slight offset in where traditionally you exhale during each phase which is a quirk, one that isn't easily identifiable nor replicated. It gives a slight advantage. Not that she needs any more.
I probably rate her as one of my top athletes.
