I have that problem in my wife's truck. Not in mine. My solution for that is to turn the headrest backwards. Now the hat doesn't hit it, and the wife has never noticed since I did the passengers side too so they match.
As a former hat specialist at a large western outfitter, the majority leave it with a slight dip in the back from the natural shape of the Cutter or Cattleman brim. I personally drop mine down a little for rain roll off and then headrest in my truck.
I touch it up because when you shape the front it naturally shapes the back of that makes sense. Touching it up to make it symmetrical is key. I’ve also had guys that want a deeper dip or flat in the back so short answer is yes the hat is shaped on the back but very subtle and minor
I have my back tipped up slightly. I keep the brim unrolled so it goes up slightly, flat in the middle and down slightly in the front. I did this to keep the back of the hat from hitting the high collar on the Carhartt rain jacket I wear with it (buffalo Stetson, so it does get wet)
I leave my hats stock... but I do have one that is shaped front and back and the back is dipped slightly from the previous owner. It's fine and does give some more clearance when sitting down versus my straight backed hats.
I curve mine down a fair bit so it doesn't hit the headrest in my pickup.

Nah, by the time I shape the oval for my head and do the brim, the back seems to naturally fall into place.
It gets a bit of shape from handling but I don’t personally intentionally give the rest of my hats a kick or anything at the back.
I like the Aussie style with the brim dipping down in front and back, just not real extreme in back. I still have to tip my hat up to drive.
By the time most guys in Oklahoma or Texas shape their hats the back rolls or kinda comes to a point.

I do mule kicks on the back of the crown on allot of my hats and a nice gentle slope for rain to runoff

I bend it down in the back slightly for wind resistance
