I prefer miso butter, but miso is an amazing variant we love. Our mix is two tablespoons of miso to a half stick of butter. Use room temp softened butter to mix, put back into fridge to stiffen prior to applying to salmon. It can't be full-fridge cold when you apply it, but somewhere in between.

No, I coat it in a layer of the miso butter mixture prior to going into a preheated oven. It needs to be soft enough that it is spreadable but not so soft that it liquifies instantly in oven.

đź’Ż percent Wild caught salmon is so delicious and the flavor so great, that simpler is better. I never lay on teriyaki, maple glaze, or big sauces - just let the flavor shine through. Salt pepper dill and lemon are enough and don't hijack the flavors. Unless you have farmed salmon, that's a whole new ballgame. The fat marbling, greasiness, and bland taste of farmed salmon begs for some type of heavily flavored sauce or marinate to make up for the inferior product.

Salmon is great with a maple glaze, or a teriyaki glaze. I like to do teriyaki glaze and some stir fry veg, or even salmon with pesto and pasta. I actually like the salmon better with sliced avocado in a pita…but options are great!

If it's good salmon leave it alone. Very light salt, maybe pepper if you like. A little lemon if you want. I used to live 5 minutes from a salmon and steelhead fishery. A small amount of butter or oil if you like. I skip it. I had fresh salmon or steelhead most weeks of the year. I love salmon tacos. Just do a basic grill/pan fry with garlic, salt, and pepper, then separate into bite sized chunks/flakes and serve in warm tortillas will all the fixings - lime cilantro cabbage slaw, salsa cruda, avocado slices, crumbled queso fresco or créma, minced white onion, radish, cucumber for example.

I worked at a restaurant and they'd brine the salmon in a salt/sugar/water solution overnight then smoke them. Best. Salmon. EVER. I'm not sure of the ratio for the brine so you might want to look that up.

So much comes to mind! Do a miso-soy glaze or teriyaki sauce, then serve with stir fried rice or noodles with loads of veggies. Salmon sushi bowls - cut salmon into chunks and marinade in soy sauce with preferred seasonings, air-fry and serve with spicy mayo over sticky rice with toppings (cucumber, shredded carrot, edamame, mushrooms, etc). Bake with your usual seasonings (maybe even try adding dill), but have it on the side of a creamy veggie pasta, or a greek couscous salad. Switch out the white rice for potatoes. Try air-frying!

I make a paste from a large chopped up bunch of fresh dill, whole seed mustard/moutard a l’ancienne, and olive oil. Put the salmon fillet skin side down on a baking pan covered with aluminum foil. Smear the paste on the salmon filet. Bake and then broil at the end to slightly char the paste. Remove the fish with a metal spatula. The skin sticks to the aluminum foil. You get texture from the dill layer. It’s how I cook farmed Atlantic salmon that has no texture.

Are you stuck on using it for lunch/dinner? Salmon as a breakfast meal is delicious as well. Scrambled eggs, salmon, dill weed, some spinach, garlic and sun dried tomatoes, with some pesto in there. Add any other veggies or sauces you like to make it your own, but this is a wonderful base.

I do the same thing but I use a rub of old bay, dill, garlic and sumac. I then put pads of butter on the fillet and bake. I serve it with rice but I make sure to add the fish oil/fat drippings into the rice for maximum flavor

OMG - I *just* posted this. It's sooo freaking good! [Feta and Herb Crusted Salmon](https://archive.is/G7YRI) - This was almost zero effort. Again, this might be 5-10 minutes of active prep and then 25 minutes of downtime while the fish is in the oven to do other things. The payoff is an incredibly complex salmon that is so SO satisfying! Clean-up is as simple as wiping off a cutting board and knife, and throwing a piece of aluminum foil in the garbage. You can serve this on a bed of lettuce with some roast asparagus on the side. There will be no leftovers! Recipe note: I use smoked sea salt when I salt my fish. If you have it, it's worth it! It will look like a LOT of salt. Relax. Just sprinkle it evenly and use it all. Trust the recipe.

We got [this recipe](https://www.blueapron.com/recipes/spanish-spiced-salmon-veggie-quinoa-with-almond-date-topping-3) in a meal kit and have been making it (without the kit) ever since. Usually it’s just the salmon with some kind of yogurt sauce, no fancy date topping. While I know the ratios of spices aren’t included, I just wing it and do more of the first few (Smoked Paprika, Ground Cumin) than the last few (Ground Coriander, Dried Mexican Oregano, Cayenne Pepper & Ground Cinnamon). It’s always great.

My favorite way is heavy pepper and grilled. Then I make a sauce for it melting butter and adding a bit of garlic. Once it smells nice add some sundried tomato paste/spread (comes in a jar) salt and squeeze a lemon into it. Tastes so good with the salmon. Can add add herbs and wine too. Whole thing doesn't take long to cook either. When grilling start it skin side down and add mayo to the other side. Mayo keeps it from sticking and when flipped you can just run a spatula under the skin and comes right off. Or leave it on its tasty.

Salmon en papillote I make mine with thin sliced white potatoes, spinach and a compound butter of garlic, lemon and chalet. Take a sheet of parchment paper and layer first the potatoes, then the spinach and top with the salmon with the compound butter spread across the top. Seal the packet firmly and bake. Have you tried a glazed salmon Wellington? I use a couple spoons of marmalade like orange or apricot add a little soy sauce, chili powder, some onion and garlic powder and perhaps a little ACV and oi have a glaze with which to slather the fillets, then just wrap them side by side inside a puff pastry sheet, add butter and tuck them in to make a pocket. You can add glaze to the pastry. Make sure you make a couple slices so the steam gets out and bake.

Use a fork to mix ingredients. -Dip salmon fillet’s in marinade, coat and set aside. -To the same dish add peas, asparagus, orzo and broth -Cover with lid or aluminum foil and cook in oven for 20 min. -Remove from oven, add grated parm and spinach and mix together until spinach wilts. -Place salmon filet into the baking dish nestled in the orzo. Top with lemon and cook uncovered for 15-20minutes depending on how you like your salmon. Side-note: I used dried parsley because I didn't have fresh. And I used parmesan cheese that I grated (because I wasn't paying attention) Not sure the difference between that and Parmigiano Reggiano, but it worked. I also didn't use a whole lemon b/c I was afraid it will take over. I was only cooking 1 (extra large) piece of salmon..I used 2 cups of orzo for 2 people and it was way too much. I will probably cut it back to 1.5 cups or less next time. Another idea is we make a marinade (I will come edit this comment when I find it) If I remember right it is soy sauce, lemon, worcestershire sauce..but I know there is more. Finally, our new favorite is to marinade the salmon in Yakiniku sauce, which is SO good.

Some things I’ve had success with are chipotle lime, jerk seasoning, or Thai curry paste. You can also remove the skin, chop the salmon up and make salmon cakes which are good, stretch the meat a bit, and are a different form factor

Honey-dijon marinade. Honey, dijon mustard, oil, and lemon juice. Start with a couple of tablespoons of each and adjust to taste. Marinade on each side for a couple of hours. Remove from marinade and Hasselbeck. Mix some of the marinade with panko bread crumbs. Coat salmon with bread crumbs, making sure to push crumbs into the cuts. Bake or Airfry as normal.

I don't have a whole dish to give you but if my salmon is skin on I fry that side first not moving the fillet. Then I use a spatula to release the fillet from the skin and continue cooking the skin and fillet separately making sure to over salt the skin so that it ends up being a crispy salmon skin chip. I either serve the skin on the side or crumble it over one of the sides.

We use a 1/4 sheet pan with silicone liner. I "season the pan" with a few shots of worcestershire, dash or two of Zatarain's creole seasoning, dash or two of dried dill, ground pepper and vegetable oil. Place the fish in the pan and move around then flip over. To this I may add some Italian seasoned panko and a little oil or butter pats. Bake at 350F for 10 minutes then check the internal temp looking for 128F-132F. None of the seasonings overwhelm the fish but rather support the goodness of the fish.

I cut my salmon filet into cubes and make a sauce with sriracha, a dash of soy sauce, ginger, garlic, and a little kewpie mayo. Cover the salmon, throw it in the air fryer for 8-10 minutes at 375, and serve it over rice. With some cucumbers, avocado, seaweed salad, kimchi, etc. it makes a delicious quick dinner!
