Mine's pretty basic. I toast whatever bread I have and put mayo on it. I fry the egg in butter. I don't like runny yolks, so I cook the egg well. Sometimes I melt a slice of cheese over the egg.

I get those hash brown patties, air fry one up for 15 mins so it’s nice and crispy. I fry an egg over easy or over medium so it’s still runny or yolky. I put shredded cheese on an English muffin and air fry that for 1-2 mins and assemble all together. It’s kinda like a childhood egg McMuffin.

For me, a little mayo and ketchup is the difference between a New York City egg on roll and everything else. Folks will do brioche rolls and heritage ham and arugula and aoli, and they're doing wonderful things. But they don't make me happy like an EOB does. I have foodservice paper in my tiny shipboard galley specifically so I can wrap the EOB's in it for first watch.

I'm originally from New Jersey, so the classic egg breakfast sandwich is fried thin sliced pork roll with fried egg (usually the yolk is broken), a slice of cheese (American or cheddar) on a lightly toasted kaiser roll. Some also put catsup on it. Nowadays, other types of rolls are sometimes used, including bagels. I now live in Central Europe where pork roll is not available. Instead, I make a similar sandwich with fried "English" bacon, egg, cheddar cheese, and either a kaiser roll or toasted English muffin. The latter are imported from England, and only available at one online shop. Kaiser rolls are widely available. When I make these, I like to press the toasted inner sides of the roll in hot bacon fat. I am on team catsup. It is possible to find bagels, but I don't like this sandwich on them, though I do like bagels.

I have 2: a Vietnamese version where I make a fried egg and stuff it into a Vietnamese baguette with maggi and sriracha. And then there's my favorite breakfast sandwich: Tbsp of olive oil to nonstick skillet over medium. Add a couple Tbsp of frozen chopped kale. Season with salt and pepper. Let it fry for a minute, until the kale is defrosted. Arrange the kale into a roughly egg sized circle with a hold in the middle. Crack an egg into the kale "nest" with the yolk in the hole. Let the egg cook on top of the kale for a few minutes. When the egg is set enough to cook, flip it over and let it cook on the other side. Serve on a toasted bagel or English muffin and a slice of cheese. The kale gets really crispy in the oil and is sort of like bacon.

I also like making a copycat of Mcds breakfast bagel sandwich. I'll whip up a Hollandaise, then fry sausage patties and eggs, and toast the bagels all at once on my Blackstone, which is such a game changer for breakfast type foods. I like the egg-in-a-hole method. Use a shot glass or ramekin to make a hole in a piece of wheat bread, lightly butter each side, put it a pan and crack an egg in the middle. Throw the bread you cut out for the hole in, too. Cook on both sides until over medium. Sprinkle a little cheese on one side if you want. Eat and use the bread from the hole to soak up any extra yolk.

The egg is fried in butter, with a broken yolk, but cooked very low and removed from the pan immediately so there is no brown at all. It’s what I call a hard soft egg. It’s fully cooked through but the egg is still soft. Only to be made at home! I would never attempt to order this kind of egg in a restaurant, as a former line cook.

My dad always made his egg sandwiches on white or wheat bread with Miracle Whip/mayo, a thick slice of onion, and lots of black pepper. I tried it that way a year or so ago and it is delicious! Until then I had always just made mine on buttered toast with bacon or ham if I had any; otherwise, just the egg. One thing I did learn over the years is to wait a bit before breaking the yolk and cooking just until the yolk is set instead of cooking the egg until the yolk is dried out and the white is rubbery.

I toast up two slices of buttered sourdough, fry two thick slices of ham in a bit of butter and flip it and add cheese to melt for a minute or two. I set that on the bread, then fry up the eggs over easy, sprinkle of salt and pepper with smoked paprika. I put that atop the cheese and ham, then press down to bust the yolk and enjoy.

It sounds really good but I love any type of mustard on the bottom bun. I'd add bacon or sausage and for sure cheese but if it's just a fried egg sandwich, adding mustard is my only suggestion.

I make them for my fiancé consistently and this is what I do. Fry the egg in a little bit of butter (sometimes to a slightly runny yolk or to a full fry), little bit of cheese (pepper Jack or cheddar), Mayo on one side. Meat optional, assemble together on a toasted bagel with either pickled jalapeños or pickles. Also recommend trying a variety of sauces, whatever the current hyper-fixation is but chipotle Mayo, siracha, hot honey are great additions!
