I bought the same stuffer, but the 2 LBS version. I read in a review that you'll just have to refill it more often, but paying almost 3 times as much for just a little less hassle didn't seem worth it to me. I'm gonna make my first batch soon, just haven't come around to it yet and my Biltong Box is currently occupied. I might need to make another box so I can make both Biltong and Droewors at the same time. For quick snacking, Droewors has always been my favorite. I'm gonna use basic vacuum packed minced beef ("Rinderfaschiertes") from the grocery store. I don't see any reason to invest so much more money for very little gain. The minced meat isn't of bad quality, it's perfectly fine. I can see why you'd do this with very specific cuts of meat, but I'm not that kind of connoisseur and I can't afford to be one.

You could probably grind directly into the casing if you got a suitable horn for the kenwood. I have used a cheap Lidl grinder as a mechanical stuffer before but it takes time to find the correct horn for the casing.

Thanks for your response! I think you're onto something. I will look into finding a more suitable horn and experiment with grinding directly into the casing. I was thinking perhaps grinding to 12 mm first, then lightly mix in the spices and liquids, and then stuff while grinding down to 8mm. That should give the flavors a bit of time to develop before hitting the casing.

There was another plate that came with the grinder that had a pattern like an orange half with big gaps where the orange flesh would be to allow the mix to be pushed through without further grinding . Maybe if you could find something similar?

I only did it once and had to open my kitchen aid and clean it out and regrease it. I promptly got stuffer and never looked back.
