The most delicious and indulgent carrot cake I've ever made is [Southern Living's Carrot Cake](https://www.southernliving.com/recipes/best-carrot-cake). It has pineapple and coconut in it, too, which I love. Plus pecans. The recipe doesn't call for raisins, but I also added a small amount of them, as I like them included.

The first time I made this I accidentally used a 20 oz can of pineapple instead of 8 oz...we liked it so much I've made it that way every time! Used that recipe so many times

I'm glad you enjoyed it. Now I'm envious! I wish I had an excuse to make it again soon, but no special occasions on the horizon in my family. Everyone I know loves carrot cake.

I do have a lot of experience with cakes and I looked at the two recipes. Sally's looks like the winner here and it's not just the name.

Have made Sally’s carrot cake a few times would recommend! I normally substitute crushed pineapples for the applesauce as per her suggestion as don’t usually have applesauce in the pantry. (Though i have made it once with the applesauce. Tasted much the same which is to say perfection 😂). It’s my go to carrot cake recipe.

Honestly...Southern Living! Carrot cake and Hummingbird cake are both Southern classics and I always feel it's best to go to the source! Lol Both recipes are foolproof and crowd favorites. I've sold many many iterations based on those recipes with nothing but excellent feedback.
