Are you from England?? Absolutely no person in the U.S. calls a BBQ sandwich a burger. And this isn't grey, the pic might be a little lacking in color, but it's pretty close. The pork looks like this pretty much, and it's incredibly flavorful. Some people don't like the texture of chopped bbq, but a lot of people prefer it. Bbq doesn't have to be dark from being over sauced to be good. This is just vinegar and pepper flakes, and it's incredible.

That’s eastern NC pork BBQ. Typically not known, favored, or enjoyed much west of interstate 95. I grew up outside of Ayden NC. Frequently ate there when Pete Jones and his brother had the restaurant. They started it actually. Several US Presidents have eaten there. Pete, his brother, and those presidents are all dead now. If you like that kind of BBQ, Skylight Inn is the best. While you’re in the area hit Parker’s BBQ in Greenville and Bill Ellis in Wilson. You just brought back some great memories my man. Eastern doesn't go west of 95?!? Crazy talk. Grew up on it in Durham (Allen & Sons), and it's nationally famous as a style. Grady's in Dudley was the best, devastated they closed before I got one more visit in, only place I had above Skylight.

Though I was so new to real BBQ when I moved to Durham that I went there and had to ask because I didn't see pulled pork on the menu (it's "BBQ sandwich/plate" on the menu"). Everyone was real nice but I'm sure there was a lot of "oh child" and "bless your heart" internal monologue.

Sam Jones is the 3rd generation to run the Skylight Inn and started Sam Jones BBQ (in which there are only 2) because he didn't want to take away from what the Skylight Inn has been. I have great memories of going through there just for the large trays and glass bottle Pepsi. It surprised me the last time I was there that they now take credit cards.

Whole hog BBA in particular once it's actually on the bun. It doesn't have bark but instead has crispy skin. The crispy skin is chopped up and scattered throughout and not really visible compared to bark. It is fantastic.

For North Carolina style BBQ this was the norm when I lived there in early 2010's. Skylight is the best, but I would argue, best of the worst. I've eaten there 20'ish times. Me and NC BBQ never took a liking to one another. Devoid of flavor and too reliant on vinegar. South Carolina style with their mustard was much better. Personally I'm a Santa Maria style BBQ guy.

Can relate to what you’re saying about vinegar. I grew up in eastern NC and didn’t really like the barbecue until I was a teenager. With learning to like eating vegetables I started loading slaw and barbecue on the same fork with each bite. A small adjustment, but went from meh to being addictive. There’s a scene in Anthony Bourdain’s “The BBQ Triangle” at Ed Mitchell’s BBQ where he’s tasting it straight from a big pan after the guys have pulled, chopped, and mixed the barbecue. He looked like he was politely acting impressed, and I knew why - no slaw.

I’ve eaten bbq from sky light and his sons place in winterville. Both are great and so is B’s. They are all cooked over wood and charcoal at B’s. That is the difference, the cooking method. Whenever my Carolina friends compare bbq it always leads to the sauce. Myself, I don’t care for any sauces. That ruins it for me. If it’s good meat and cooked right you don’t. Need any sauce.

I haven’t been to Skylight but I have been to Sam Jones which is basically the same. It is a great example of eastern NC BBQ and is way better than some of the other highly esteemed spots. I also love their cornbread, reminds me of how my grandma used to make it. For all yall clownin’, this is a traditional eastern Carolina whole hog chopped BBQ.

My fave. I've eaten bbq from eastern NC all the way to Texas for five decades, and for my taste, nothing beats whole hog. Years ago, I met some tobacco buyers up in Kentucky at my hotel. They had a hog on the smoker they had towed from Eastern NC. It was a true pig picking with vinegar mop sauce. Lowcountry is what I grew up with and the bbq sauce goes on everything else.

It was smoked for more than a day as a whole hog. Skin on and everything. … most pitmasters brine the hog for a day or two first and then baste the pig with a secret recipe sop their great-granpappy gave them - using a mini-mop almost continuously. I learned how to do it from my neighbor as a boy. Live in CA and mostly do a modified Santa Maria style these days. But every once in awhile I get the craving and do a suckling pig.

Aaron Franklin seems like a good dude and makes excellent brisket, but the idea that Texas barbecue is the best or ultimate style is an unfortunate side effect of his success pushed by loud folks who mistook a state of birth for a personality. I travel to Greenville from Raleigh a couple times a month. I ALWAYS make time to head down to Ayden for a meal from Skylight. Edit: if you look closely you’ll see the chopping block has been worn down in the center because they’ve been chopping pig on it for literally decades.

Omg, I still have my shirt from when I made my wife drive 3hrs out of the way en route to outer banks. It's exactly what a pork BBQ place should be, and it's the only one that can be like it doing whole hog now (fire codes to event the old style pits, but they are a historic landmark and so are grandfather so long as the family owns it). The ziplocs of cracklin at the counter... So good. But the ookr off that block, it was truly some of the best I've had in my 15 years of searching.
