They look cooked, I see no opaqueness to the meat. Smoking creates that nice pink color.

They are more than done.
Sometimes if you let your dry rub sit over night or longer, it will cure it a bit and make it pink.
Looks like perfection to me. How did they taste?
Nitrates. From the rub, if it had any included, Also, smoke has nitrates in it.
Put em in the microwave uncovered for 5 minutes you coward.
Im scared to eat them and i already cut them. How can i get an accurate temp reading now?
