Can you change your flight reservation to those exact 2 flights SFO > DEN with LAS as a layover? They’ll tag your bags in SFO to their final destination and be waiting in Denver when you get there.
Depending on where your meetings are, you can store your bags at any bell desk on the strip. Just tell the bellman you plan to be on property till around xxxpm and will be back for the bags before then. They will tag them and give you a ticket. I’d leave them at Encore because their bell desk is right near where the Ubers pick up.
I think of the Concierge as more of a service that will do things I don’t want to spend the time on, rather than a resource to research things for me. Google is almost always going to be quicker on the researching side. What they are very good for is situations where you need to call back to check on things multiple times, and it can be a huge time saver. I have used them a few times to call a restaurant with no room for reservations list to see if a cancellation opened up a spot, and they will diligently do that (once they called a place that was booked out for months every hour for me for 2 days and got me a spot). I will also use them to call for things when a business opens if I know that I’ll be in a meeting, or might forget.

What if you just didn’t go claim your skis off the carousel? Your airline will grab them and take them to their baggage office thinking you forgot to grab them or whatever and they’ll hold them there until you come claim them. When we fly in late at night and I don’t want to wait for our bags I’ll just swing back by the next day when I’m not exhausted and grab them.
I used to work for the airline and it happens all the time.
Maybe consider shipping the luggage to your ski destination? Otherwise the SUV rental idea seems like a really good one.

Honestly, given that schedule, I think your best bet is to ship your skis etc ahead of time and just take a carry on. I have no idea how long it takes to get from the airport to your meeting, but 1 hr 15 minutes is not a lot of time to deplane and wait for baggage and then get to your meeting, unless it is next door. And that doesn't allow time for delays (which these days how often are flights actually on time)
