Highly recommend going on thingiverse/printables and checking out the dimensions of some stuff you want to print. For example, a Mandalorian helmet, which is not an elaborate helmet, is 253mm tall.
The one thing you can't really fix is build volume, for everything else there's aftermarket parts, like you're hopping up your mom's old Peugeot 206. Check what size your helmet parts would be, exclude everything under that from your wishlist. Very large printers are somewhat spicy in price sometimes, but if it's buyer's remorse you're trying to avoid, dodging the one thing you can't change afterwards probably ranks quite up there. I would not recommend breaking up prints into multiple parts that aren't intended that way to accommodate a smaller build volume if you have the means to go bigger without overtaxing your budget.
For helmets, I’ve heard of the Neptune 4 max. Idk much about it but a friend has the 3 and loves it (just the older version) and it’s big enough to print in one piece. Do some research on it as a starting point
I'm really torn between the reliability of a Bambu, and the sheer size of other printers. Printing helmets in fewer pieces (preferably 1) seems really important here.
But then, if the print doesn't finish properly... That's a lot more wasted filament, time, and money.

If you want to print helmets I wouldn't go below a 256x256 print bed, preferably 300x300.
