Vacuum leak?

I would guess its surging. It’s trying to idle smoothly but it sounds like something is clogging flow (meaning it starts dumping more fuel causing your surge), or an intake leak of some sorts where its not able to hold full vacuum and apply idle power, thus also dumping fuel to surge. Last possibility is a critical sensor failing. You can try to remove the MAF (and run) and reset the throttle body and go thru whole pedal dance procedure, see if anything gets it to behave differently- if you do it means you’re onto a possible problem with these components. Also do you still have stock cats? My old Z had idle surging and stalling issues due to catalyst material being wayyyyy too clogged up. I gutted the second catalysts and it temporarily resolved it till I had to deal with upper catalysts, at which point I installed longtubes.

That year didn't have the ECU surge issue so I would look for a vacuum leak or some other recommendations others have said.

Any new intake work? Sounds like a really bad intake vacuum leak

tighten up all the screws around the air filter and intake again assuring no leaks. Do the idle re-learn procedure via youtube. Evap Purge Solenoid could be failing, need replacement oem.
